Irish cuisine is way too tasty to serve just one day a year. It's unfortunately easy to forget that if you aren't Irish. We are going to make up for all those missed opportunities on March 8 with a menu of rustic comfort food. The usual ingredients - brisket, soda bread, mashed potatoes, beer - make their appearance, in a somewhat evolved form.
A fresh beef brisket slowly poached in vegetable stock with spices and a selection of root vegetables is our featured dish. We will prepare a quick Sun-dried Tomato Mustard to spoon on the side. That Irish potato stable, colcannon is on the menu with kale and a restrained amount of cream and butter stirred in.
Dessert is a sensational Porter and Molasses Bundt Cake with Caramel and Whiskey Sauce. After a meal with a finish like this, we always wish we were Irish. Recipes: Braised Beef Brisket with Pickling Spices; Sun-Dried Tomato Mustard; Kale Colcannon; Porter Bundt Cake with Caramel Whiskey Sauce
