We take our French techniques on the road to Dookey Chase, the oldest black-owned eatery in New Orleans for a Mardi Gras Party.
It's owner, Leah Chase, opened a sandwich shop in 1941 that grew into a restaurant and became an institution.
We are going to prepare a roux like no other for Leah Chase's famous Gumbo.
Also on the menu is her famous Sweet Potato Pie that sounds home-spun, but is classic Creole French baking.
We go through the "whys" as well as the "how to's" in both recipes to assure your success.
We finish our meal with a demi-tasse of Cafe Brulot.
Mardi Gras beads are optional dress.
