WINTER FRUIT GRATIN

 

Ingredients for 4 servings:

Fruit:

½  pineapple, halved, peeled, cored and thinly sliced

2 kiwifruit, peeled and sliced

1 large mango, halves removed, peeled and diced

Topping:

4 butter cookies, crushed

2 tablespoons brown sugar

4 teaspoons unsalted butter

 

Directions:

 

Preheat the oven to 375 degrees.  Lightly butter a shallow baking dish.  Make concentric circles of pineapple and kiwi slices. Distribute the mango pieces overall.

 

Stir together the cookie crumbs and sugar.   Sprinkle this mixture over the 4 dishes.  Dot with butter and bake 15-20 minutes, until the fruit is bubbly.

 

 

VARIATIONS:

 

Other fruit possibilities: papaya, banana, starfruit and pineapple in any combination.

 

Toppings:  Gingersnap cookies, sugar cookies, or pecan sandies

 

Additional flavorings:  Minced crystallized ginger, unsweetened coconut, rum or Gramd Marnier
