PIZZA DOUGH

 

Ingredients for 2  as” pizzas::

 

2-1/2 cups unbleached bread flour

½ cup semolina flour

2 teaspoons SAF yeast

2 teaspoons fine sea salt

1 + cups lukewarm water (110 degrees)

2 tablespoons olive oil

 

Directions;

Mix the flour, yeast and salt together well with the paddle attachment.  Pour in the water and olive oil with the machine running on low speed.  Knead on low speed for 3 minutes adding a tablespoon or more water as needed to achieve a smooth dough that cleans the sides of the bowl..

Let the dough rest for 10 minutes.  Exchange the paddle for a dough hook..  Knead the dough on medium speed for 3 minutes, until it is  smooth and firm.

 

Cover and let the dough rise for 1 hour in a warm spot (80-100 degrees).  After 30 minutes preheat the oven (holding a pizza stone) to 500 degrees.

 

Turn out the risen dough onto a lightly floured work surface and cut into two pieces.  Roll each portion into a 12” circle, place on a mesh baking circle, cover and bake for 10 minutes, until lightly browned.
