GRILLED PORTABELLO MUSHROOM SALAD
WITH ONIONS, SHALLOT VINAIGRETTE AND SMOKED GOUDA CHEESE

 

Ingredients for 4 salads:

Salad:

4 Portabello mushrooms, wiped clean and thickly sliced

1 bunch large scallions or green onions, trimmed to 1” green, halved

2 red onions, peeled and sliced

8 ounces smoked mozzarella or gouda cheese

 

Dressing;

1 teaspoon Dijon mustard

3 tablespoons  Mignonette condiment

½ cup olive oil

1 tomato, seeded and diced

1 tablespoon capers, rinsed and drained

1 hard-boiled egg, chopped

Kosher salt and black pepper to taste

 

Directions:

Preheat a charcoal grill, cast-iron skillet grill or broiler.  Cook the mushrooms, and onions until they are colored and beginning to blacken.

 

Dressing:

Whisk the vinegar condiment into the mustard in a bowl.  Whisk in the olive oil and stir in the other ingredients.

 

Assembly:

Place the mushroom slices in a wheel in the center of the plate.  Toss the onions in the dressing and mound in the center.  Lay on two slices of mozzarella or 1 slice of the Gouda
