Ingredients for 1 serving:
2 cups mixed salad greens
2 ounces mushrooms, wiped or brushed clean, stems trimmed and sliced
sprinkling of salt
2 tablespoons Consorzio scented olive oil, divided
1 tablespoon balsamic vinegar
Mound the salad greens in a mixing bowl. Heat a nonstick skillet over medium flame.
Heat 1 tablespoon of oil in the skillet. Add the mushroom slices and saute them until they wilt. Lightly salt them. Spoon the slices onto the salad greens. Toss the salad with remaining olive oil. Sprinkle on the vinegar and toss again.
