GREEK STYLE VEGETABLE AND FETA SALAD
WITH NO-SUGAR STRAWBERRY APPLE VINAIGRETTE
Ingredients for 4 servings:
1 small red onion
1 medium head fennel
1 large tomato or 1 cup cherry tomatoes
1/2 cup parsley leaves
4 ounces feta cheese, crumbled
2 tablespoons No-Sugar Apple Strawberry Jam
1/3 cup walnut oil
Kosher salt and freshly ground black pepper to taste
1/2 cup toasted walnut halves
Salad: Peel and thinly slice the onion. Soak slices in iced water for 15 minutes. Drain and pat the rings dry.
Halve the fennel, cut out root portion and thinly slice. Rinse, halve and cut the tomato into cubes. If you are working with cherry tomatoes, halve them. Pluck the leaves from parsley stems and measure tightly packed.
Combine jam and walnut oil in a small container and blend with an immersion blender or mix in a blender bowl. Season with salt and pepper to taste.
Divide the onion rings among four plates. Scatter the fennel slices on top. Continue with the tomato pieces, parsley leaves and feta cheese. Drizzle the dressing over each serving. Sprinkle on the walnuts and serve.
