BEER AND CHEESE GRATIN

Ingredients for 4 servings:

1 cup beer

4 slices of day-old baguette

3 large eggs

1 tablespoon unsalted butter

4 slices or grated firm cheese

 

Directions:

Beat the eggs together in a large flat container.  Whisk the beer into the dish.  Place the bread slices in the dish and let them soak for 1 minute.  Turn and repeat on the other side.

Heat the butter in a large skillet.  Add the soaked slices and brown them on both sides.  Remove slices to a baking sheet.

Preheat the broiler.  Lay the cheese slices on the toast and place in the broiler for a few minutes until the cheese is melted and bubbly.

Serve with a green salad and pour the same beer you used to make the toast.
