PEAR RED ONION COMPOTE

 

Ingredients for 2 - 1/2 cups:

 

2 cups Bartlett pears, peeled seeded and chopped

2/3 cup red onion, peeled and diced

2 cups dry white wine (sauvignon blanc)

2/3 cup sugar

3 slices fresh ginger, peeled

 

Directions:

 

Combine all the ingredients in a saucepan, bring to a simmer and cook slowly until almost all the liquid has evaporated.
