MASTER RECIPE FOR VINAIGRETTE SALAD DRESSING
1/2 teaspoon Dijon mustard
2 tablespoons white or red wine vinegar
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black peppercorns
1/3 cup olive oil
Combine and whisk together the wine vinegar, mustard, salt, and pepper in a small bowl. Add the oil in a steady stream while continuing to whisk. Add sparingly to salad greens, toss, and add more as needed.
Yield: 1/2 cup salad dressing
