MONET'S BANANA ICE CREAM
Ingredients for 1 quart ice cream:
2 cups milk
1/2 teaspoon salt
5 egg yolks
2 cups confectioner's sugar
1 teaspoon cornstarch
4 ripe bananas
2/3 cup heavy cream
Scald the milk in a saucepan with the salt. Whisk together the egg yolks, sugar and cornstarch in a mixing bowl. Pour in some of the hot milk, stirring constantly. Return this mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens enough to coat the back of a spoon. Remove from the heat.
Peel and mash the bananas. Pass them through a food mill into the custard. Stir in the whipping cream. Chill this ice cream base.
Freeze according to the directions accompanying your ice cream machine.
Monet liked his freshly made ice cream pressed into a conical mold and frozen for an hour, then unmolded, wrapped in a linen napkin and presented on a platter.
