6 cups berries: blackberries, strawberries, blueberries, and raspberries

1/4 cup sugar

grated zest of one orange or lemon

1 teaspoon unsalted butter


1-1/3 cups all-purpose flour

1/4 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

1 large egg

1/3 cup milk

6 tablespoons unsalted butter


1 pint vanilla ice cream



Filling: Preheat the oven to 375 degrees.

Rinse the berries in a bowl of cold water.  Drain the berries well and roll on a dry towel.  Hull and quarter the strawberries.

Combine all berries in a bowl.  Toss them in sugar and citrus zest.


Thoroughly butter a 2 quart baking dish. Spread the fruit out evenly in the dish.



Whisk the flour, baking powder and salt together in a bowl.

Beat the egg with sugar and blend in the milk.  Melt the butter in the microwave and stir into the egg mixture.


Pour the wet ingredients over the dry and stir them together with a fork until just mixed.  Using two spoons, distribute the batter in a 4" thick layer over the top of the berries starting in the center of the dish.


Bake the cobbler for 35 - 45 minutes until the topping is lightly browned.  Cool on a rack for 15 minutes before serving.  Serve with softened ice cream
