4 large, flawless bananas

1/4 cup brown sugar

1/4 teaspoon ground cinnamon

1/8 teaspoon each ground cloves and nutmeg

1 tablespoon unsalted butter

1 tablespoon lemon juice or dark rum

garnish: Mascarpone or vanilla ice cream




Preheat the oven to 350 degrees.  Lightly butter a 9"x14" glass baking dish.  Peel and halve the bananas lengthwise.  Lay them in a single layer in the dish with the cut side facing up.


Stir the sugar and spices together.  Sprinkle this topping over the bananas.  Dice up the butter and scatter it over the sugar coating.  Spoon the lemon juice or rum evenly over all.


Bake for 25 minutes, removing the dish after 15 minutes to baste the bananas with the melted topping.


Serve the bananas warm or at room temperature.  Spoon on the melted topping and add a small scoop of Mascarpone or  ice cream.
