8 golden delicious apples ( Preferred seasonal varieties: golden delicious, jonathon, jonagold)
8 - 2” pieces Madagascar vanilla beans
8 teaspoons unsalted butter
8 teaspoons brown sugar
Preheat the oven to 375 degrees.
Select a baking dish just large enough to hold the apples comfortably in a single layer. With a corer or melon baller, scoop out the core of each apple but leave the base intact.
Divide the butter and sugar among the hollowed centers of each apple. Cut each piece of vanilla bean lengthwise leaving ¼” intact to hold the bean together. Place the beans in the hollowed apples with the cut ends down.
Bake, uncovered for 40 minutes. Raise the heat to 450 degrees and bake 10 minutes longer, until the apples begin to caramelize and burst.
