Ingredients for 4 servings:

1 bunch scallions, trimmed and thinly sliced 1" into green

1/2 cup green bell pepper, diced

1/2 avacado, diced

1/2 jalapeno pepper, seeded and minced

1 large tomato, seeded and diced

1/4 cup cilantro leaves

Kosher salt and fresh lime juice to taste

  • Assemble and mix all the ingredients except for the salt and lime juice in a mixing bowl. Chill.

  • Season to taste with salt and lime juice just before serving.
