4 small winter squash: sweet dumpling preferred

1/3 cup white raisins

2 tablespoons Calvados or bourbon plus water

4 apples: Macintosh or Jonathon preferred

4 tablespoons butter

2 tablespoons brown sugar

1/4 teaspoon ground cloves

1 tablespoon lemon juice




Preheat the oven to 350 degrees.  Halve the squash; scrape out the seeds and membrane.  Lightly salt the interior of the squash and lay the halves cut side down on a large bake sheet.  Pour on 1/4" water and bake until the squash is tender, about 30 minutes.


Soak the raisins and bourbon to which just enough water is added to cover them.


Quarter, core and chop the apple pieces into 1/2" chunks.  Sauté them in butter in a skillet until they soften.  Off the heat, stir in the brown sugar lemon juice and reserved raisins.

Fill the warm squash halves with the apple filling.  Return to the oven and bake for another 20-30 minutes, until tender.
