OCTOBER 11 THE PLEASURES OF FALL PRESERVING

During this harvest season, take the time to learn the skills and discover the creative potential of small batch fruit preserving. Not only are fresh jams and jellies full of flavor and lower in sugar than commercial products, they make seductive gifts . Our preserves prepared from Madelaine's newly released cookbook, Artisanal Preserves include Ginger Pear Jam, Raspberry Apple Preserves and Lemon Marmalade. We will also bake Cream Scones and Zucchini Bread from the book's many bread and dessert recipes.

 

NOVEMBER 1 WINTER SQUASH TAKES CENTER STAGE

Hard shell squash come in an amazing array of colors, sizes and shapes. Choosing the right one takes some expertise so this class begins with a taste and texture comparison of several popular varieties. We then experience their versatility in recipes where squash play a major role: Squash Risotto with Caramelized Onions, Braised Turkey Thighs with Squash and Cranberries and Butternut Cake with Apples

 

NOVEMBER 15 THANKSGIVING SIDES DISHES

This holiday feast is about more than roast turkey. It's the side dishes that add variety and make this feast memorable, especially today when there is likely to be a vegetarian at the table. Be prepared to satisfy everyone with updated versions of traditional sides: Three Bean Gratin, Roasted Root Vegetables with Balsamic Vinaigrette and a Potato, Squash and Roasted Garlic Puree.

 

DECEMBER 6 HOLIDAY BRUNCH

Everyone comes fresh and primed for a rich meal of dressed-up comfort food during the holiday season. Give them a choice of all their Sunday breakfast favorites: Root Vegetable Hash with Poached Eggs, a Ham and Gruyere Quiche and Lobster Mac and Cheese. For dessert, there's a refreshing Cranberry Pear Compote with Toasted Almonds. 

 

 

 

Classes meet from 10am-1pm and include lunch.  Recipes, aprons and coffee service provided.
